SWEET CHILLI CRISPY CHICKEN RICE SALAD
This sweet chilli crispy chicken rice salad is fresh, healthy, and satisfying - perfect for lunch or dinner. Crispy baked rice, tender chicken, crisp vegetables, and a tangy-spicy dressing make it a standout bowl meal.

Ingredients
4 breaded chicken fillets, cooked
2 cucumbers, thinly sliced
2 avocados, in cubes
1 bunch spring onions, finely chopped
200g peas or edamame
250g cooked rice
2 tsp soy sauce
1 tsp sesame oil
100g greek yoghurt
65g perinaise
1 tbsp sriracha
50g sweet chilli sauce
1 tbsp white wine vinegar
Method
Preheat your oven to 180 degrees celsius.
Mix together the rice, soy sauce and sesame oil, spread in a thin layer on a sheet pan and bake until crispy (approx. 40 mins)
Prepare all your vegetables and chicken as listed, and add to a large bowl.
In a separate bowl, mix together the ingredients for the dressing (greek yoghurt, perinaise, sweet chilli, sriracha and vinegar).
Add your crispy rice and dressing to the bowl with chicken and vegetables, and mix!
Tips
Use day-old rice for extra crispiness
Adjust sriracha for your preferred heat level
Add fresh herbs (cilantro or mint) for extra freshness
