MORMORS CHOCOLATE HAZELNUT COOKIES “NØTTEKJEKS”
If there’s a recipe that reminds me of Mormor the most, it’s these cookies. She would make at the beginning of December, and we’d be fully nourished on these for the entirety of Christmas! They have hazelnut and dark chocolate chunks in a vanilla dough, and I must say the batter alone is enough for me to make them. We usually double the recipe to last us through December in a cookie tin.
Prep time: 20 mins
Cook time: 10 mins (per tray)
Serves 40
Ingredients
125g brown sugar
125g caster sugar
200g butter (room temp)
2 eggs
225g flour
1tsp baking powder
100g hazelnuts
100g dark chocolate
Method
Preheat your oven to 170 degrees Celcius and line a baking tray with baking paper.
Mix together the sugars and butter until white and fluffy.
Add your eggs and mix until combined.
Add your flour and baking powder, and mix until just incorporated.
Chop your hazelnuts into pieces and add to your mixture along with chocolate chips.
Once combined, add teaspoons of the dough to your baking tray - makes about 40 cookies.
Bake for 10 mins until the edges start to go golden (centres might look undercooked but they will set).
Leave to cool for 10 mins and enjoy!
