caramelised pear protein pancakes
This is probably my favourite sweet breakfast I’ve ever made - bold statement I know… The pears are sweet, caramelised, and elevate these protein pancakes any day! I adapted this recipe from Alexander Botting’s recipe as I didn’t have the right ingredients, but it turned out better than I ever thought! Enjoy :)

Ingredients
1/4 cup plain flour
1 scoop vanilla protein powder
1 teaspoon baking powder
1/2 cup milk
1 tablespoon white wine (or apple cide) vinegar
1 pear
1.5 tablespoons olive oil
2 tablespoons maple syrup
2 tablespoons water
Method
Combine the milk and vinegar in a small bowl, leave to thicken for 2 mins.
In a separate bowl, bombine the dry ingredients (flour, protein powder, and baking powder).
Mix the wet and dry ingredients together, plus 0.5 tablespoons olive oil (if the batter is thick, add a splash of milk until it’s pourable, but not think).
Halve, decore and thinly slice the pear.
In a pan, add 1 tablespoon olive oil, and all the maple syrup and water. Leave to boil for 3 mins until slightly thickened.
Add the pears to the pan in the pattern you want to be visible, and caramelise for approx 8 mins.
Add the batter, to the pan (in an even layer) and cover with a lid (or plate / foil).
Cook until the pancake is set - you should see bubbles set in the pancake (about 10 mins).
Flip onto a plate (the pears will now face up), and add your toppings of choice!
